Peach Pound Cake (Print Version)
Ingredients:

1 ½ cups all-purpose flour.

1 ½ tsp baking powder.

¼ tsp salt.

½ cup unsalted butter (softened).

1 cup granulated sugar.

2 large eggs.

1 cup sour cream.

1 tsp vanilla extract.

1 ½ cups fresh peaches (peeled and diced).

2 tbsp all-purpose flour (for coating peaches).
Instructions:

Set your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.

In a medium bowl, whisk together 1 ½ cups flour, baking powder, and salt. Set aside.

In a large bowl, beat the softened butter and granulated sugar until light and fluffy.

Beat in the eggs, one at a time, then mix in the vanilla extract.

Gradually add the flour mixture to the butter mixture, alternating with sour cream, beginning and ending with the flour mixture. Mix until just combined.

Toss diced peaches with 2 tablespoons of flour to coat. Gently fold the peaches into the batter.

Pour the batter into the prepared loaf pan. Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
