Instructions:

In a bowl, beat softened cream cheese, sugar, vanilla extract, and strawberry jam/puree until smooth. Cover and refrigerate while making the cookie dough.

In a large bowl, cream softened butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla extract; mix until combined.

In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Fold in crushed freeze-dried strawberries.

Chill the dough in the refrigerator for 30 minutes.

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Scoop 1 tbsp of dough, flatten it, and add 1/2 tsp of cheesecake filling to the center. Flatten another tbsp of dough, place it on top, and seal the edges. Roll into a ball.

Place dough balls on the baking sheet and bake for 12-15 minutes, or until lightly golden around the edges.

Let cookies cool on the baking sheet before transferring to a wire rack.
