Strawberry Cheesecake Cookies (Print Version)

Ingredients:

01 - 1/2 cup unsalted butter, softened.
02 - 1/2 cup granulated sugar.
03 - 1/2 cup brown sugar.
04 - 1 large egg.
05 - 1 tsp vanilla extract.
06 - 1 3/4 cups all-purpose flour.
07 - 1/2 tsp baking soda.
08 - 1/4 tsp baking powder.
09 - 1/4 tsp salt.
10 - 1/2 cup freeze-dried strawberries, crushed.
11 - 4 oz cream cheese, softened.
12 - 2 tbsp granulated sugar (for filling).
13 - 1 tsp vanilla extract (for filling).
14 - 1/4 cup strawberry jam or puree.

Instructions:

01 - In a bowl, beat softened cream cheese, sugar, vanilla extract, and strawberry jam/puree until smooth. Cover and refrigerate while making the cookie dough.
02 - In a large bowl, cream softened butter, granulated sugar, and brown sugar until fluffy. Add egg and vanilla extract; mix until combined.
03 - In a separate bowl, whisk together flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Fold in crushed freeze-dried strawberries.
04 - Chill the dough in the refrigerator for 30 minutes.
05 - Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
06 - Scoop 1 tbsp of dough, flatten it, and add 1/2 tsp of cheesecake filling to the center. Flatten another tbsp of dough, place it on top, and seal the edges. Roll into a ball.
07 - Place dough balls on the baking sheet and bake for 12-15 minutes, or until lightly golden around the edges.
08 - Let cookies cool on the baking sheet before transferring to a wire rack.
09 - Serve and enjoy these delightful cookies with a creamy strawberry surprise inside!.
