Cheesecake Pops (Print Version)
Ingredients:

8 oz cream cheese, softened.

1/2 cup granulated sugar.

1/2 cup sour cream.

1/2 cup heavy cream.

1 tsp vanilla extract.

1/2 cup crushed graham crackers.

1 cup crushed strawberries (fresh or frozen).

1/2 cup granulated sugar.

1 cup graham cracker crumbs.

1/4 cup melted butter.

1/2 cup white chocolate chips (optional).
Instructions:

Beat cream cheese until smooth. Add sugar and vanilla, mixing well. Stir in sour cream and heavy cream until creamy, then fold in crushed graham crackers.

Mix crushed strawberries with sugar. Combine graham cracker crumbs with melted butter until it resembles wet sand. Melt white chocolate chips if using.

Fill popsicle molds 3/4 full with cheesecake filling. Tap molds to remove air bubbles. Drizzle with white chocolate if desired, then top with the graham cracker mixture.

Freeze for at least 4 hours.

Run warm water over molds to loosen popsicles, then gently pull out and enjoy.
Notes:

For a more intense strawberry flavor, mix strawberry puree into the cheesecake filling.

If you don’t have popsicle molds, use paper cups and wooden sticks.
