Cheesecake Pops (Print Version)

Ingredients:

01 - 8 oz cream cheese, softened.
02 - 1/2 cup granulated sugar.
03 - 1/2 cup sour cream.
04 - 1/2 cup heavy cream.
05 - 1 tsp vanilla extract.
06 - 1/2 cup crushed graham crackers.
07 - 1 cup crushed strawberries (fresh or frozen).
08 - 1/2 cup granulated sugar.
09 - 1 cup graham cracker crumbs.
10 - 1/4 cup melted butter.
11 - 1/2 cup white chocolate chips (optional).

Instructions:

01 - Beat cream cheese until smooth. Add sugar and vanilla, mixing well. Stir in sour cream and heavy cream until creamy, then fold in crushed graham crackers.
02 - Mix crushed strawberries with sugar. Combine graham cracker crumbs with melted butter until it resembles wet sand. Melt white chocolate chips if using.
03 - Fill popsicle molds 3/4 full with cheesecake filling. Tap molds to remove air bubbles. Drizzle with white chocolate if desired, then top with the graham cracker mixture.
04 - Freeze for at least 4 hours.
05 - Run warm water over molds to loosen popsicles, then gently pull out and enjoy.

Notes:

01 - For a more intense strawberry flavor, mix strawberry puree into the cheesecake filling.
02 - If you don’t have popsicle molds, use paper cups and wooden sticks.
