Cheesecake Cups (Print Version)

Ingredients:

01 - 1 cup graham cracker crumbs.
02 - 1/2 cup unsalted butter, melted.
03 - 1/4 cup granulated sugar.
04 - 8 oz cream cheese, softened.
05 - 1/2 cup powdered sugar.
06 - 1 tsp vanilla extract.
07 - 1 cup whipped topping (Cool Whip).
08 - 1 (3.4 oz) package strawberry instant pudding mix.
09 - 2 cups milk.
10 - 1 cup fresh strawberries, diced.
11 - Whipped cream (for garnish).
12 - Fresh strawberries (for garnish).
13 - Optional: additional graham cracker crumbs (for garnish).

Instructions:

01 - In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.
02 - Spoon 1-2 tablespoons of the mixture into the bottom of serving cups or bowls. Press down to form a crust layer.
03 - In a mixing bowl, beat softened cream cheese until smooth.
04 - Add powdered sugar and vanilla extract, mixing well.
05 - Gently fold in whipped topping until fully incorporated. Set aside.
06 - In another bowl, whisk together the strawberry pudding mix and milk until thickened (about 2 minutes).
07 - Fold in the diced strawberries.
08 - Add a layer of cheesecake filling on top of the graham cracker crust in each cup.
09 - Spoon strawberry pudding over the cheesecake layer.
10 - If using deep cups, repeat layers, finishing with a strawberry pudding layer.
11 - Cover cups and refrigerate for at least 2 hours to set.
12 - Top with whipped cream, diced strawberries, and graham cracker crumbs before serving.

Notes:

01 - For a firmer crust, press the graham cracker mixture firmly into the cups.
02 - Use fresh, ripe strawberries for the best flavor in the pudding.
