Cheesecake Cups (Print Version)
Ingredients:

1 cup graham cracker crumbs.

1/2 cup unsalted butter, melted.

1/4 cup granulated sugar.

8 oz cream cheese, softened.

1/2 cup powdered sugar.

1 tsp vanilla extract.

1 cup whipped topping (Cool Whip).

1 (3.4 oz) package strawberry instant pudding mix.

2 cups milk.

1 cup fresh strawberries, diced.

Whipped cream (for garnish).

Fresh strawberries (for garnish).

Optional: additional graham cracker crumbs (for garnish).
Instructions:

In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until well combined.

Spoon 1-2 tablespoons of the mixture into the bottom of serving cups or bowls. Press down to form a crust layer.

In a mixing bowl, beat softened cream cheese until smooth.

Add powdered sugar and vanilla extract, mixing well.

Gently fold in whipped topping until fully incorporated. Set aside.

In another bowl, whisk together the strawberry pudding mix and milk until thickened (about 2 minutes).

Fold in the diced strawberries.

Add a layer of cheesecake filling on top of the graham cracker crust in each cup.

Spoon strawberry pudding over the cheesecake layer.

If using deep cups, repeat layers, finishing with a strawberry pudding layer.

Cover cups and refrigerate for at least 2 hours to set.

Top with whipped cream, diced strawberries, and graham cracker crumbs before serving.

For a firmer crust, press the graham cracker mixture firmly into the cups.
