Sweet Potato Brownies (Print Version)

Ingredients:

01 - 2 large sweet potatoes, cooked and mashed.
02 - 1 1/2 sticks unsalted butter, plus more for greasing.
03 - 2 cups sugar.
04 - 4 large eggs.
05 - 1/2 cup unsweetened cocoa powder.
06 - 1 tsp vanilla extract.
07 - 1 1/4 cups all-purpose flour.
08 - 1 tsp salt.
09 - 1 cup semi-sweet chocolate chips.
10 - Optional: nuts, marshmallows, or caramel sauce.

Instructions:

01 - Preheat oven to 350°F (175°C) and grease an 8-inch square baking pan.
02 - In a large bowl, combine mashed sweet potatoes, melted butter, sugar, eggs, cocoa powder, and vanilla.
03 - Stir in flour and salt until just combined.
04 - Gently fold in chocolate chips.
05 - Pour batter into prepared pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
06 - Allow to cool completely before cutting into squares.
