Ingredients:

01 - 1 box of vanilla cake mix.
02 - 3 large eggs.
03 - 1 cup water.
04 - ½ cup vegetable oil.
05 - 1 pint strawberry ice cream (softened).
06 - 1 pint mint chocolate chip ice cream (softened).
07 - 1 pint blueberry ice cream (softened).
08 - 2 cups heavy whipping cream.
09 - ½ cup powdered sugar.
10 - 1 tsp vanilla extract.
11 - Food coloring (various colors).
12 - Edible glitter.
13 - Sprinkles.
14 - Unicorn cake topper (optional).

Instructions:

01 - Preheat your oven to 350°F (175°C). Prepare and bake the vanilla cake mix according to package instructions. Allow to cool completely.
02 - While the cake cools, soften the ice creams slightly to make layering easier.
03 - Once the cake is cool, cut it in half horizontally. Place one layer on a serving plate, then spread the strawberry ice cream evenly on top.
04 - Add the second layer of cake and repeat with mint chocolate chip ice cream.
05 - Add the final layer of blueberry ice cream and smooth the top. Freeze for at least 2 hours to set.
06 - In a large bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Divide into bowls and color with food coloring as desired.
07 - Remove the cake from the freezer. Frost the entire cake with the whipped cream, creating swirls with different colors.
