Walnut Cherry Slices (Print Version)

Ingredients:

01 - 1 cup butter, softened.
02 - 1 cup confectioner's sugar.
03 - 1 large egg, room temperature.
04 - 1 tsp vanilla extract.
05 - 2 1/4 cups all-purpose flour.
06 - 1 cup chopped toasted walnuts.
07 - 2 cups chopped candied cherries (red & green).

Instructions:

01 - Beat softened butter and confectioner's sugar until light and fluffy (approx. 3 minutes).
02 - Mix in the egg and vanilla extract until fully incorporated.
03 - Gradually add in the flour, mixing thoroughly.
04 - Stir in the chopped walnuts and candied cherries using a wooden spoon.
05 - Shape dough into an 18-inch log on parchment paper, wrap tightly, and refrigerate for at least 1 hour.
06 - Preheat oven to 325°F and line a baking sheet with parchment or silicone mat.
07 - Slice the dough into 1/4-inch thick pieces and place on the baking sheet about 1 inch apart.
08 - Bake for 10-12 minutes until the edges are lightly browned.
09 - Cool on the baking sheet for 5 minutes before transferring to a wire rack.
