01 -
Preheat your oven to 350 degrees. Spray a 9x13 inch baking dish with nonstick spray.
02 -
Add 1 1/2 cans of cherry pie filling to the bottom of the baking dish, spreading it out evenly. Save the other half can for later.
03 -
Sprinkle the entire box of yellow cake mix evenly over the top of the pie filling. Don't mix it in - just let it sit on top.
04 -
Gently pour the 7-Up over the top of the cake mix.
05 -
Use the back of a spoon to gently swirl and incorporate the cake mix and 7-Up until it's no longer bubbly. You're not fully mixing it - just making sure all the cake mix gets covered with the soda.
06 -
Dollop the remaining cherry pie filling on top in spoonfuls.
07 -
Bake on the middle rack for about 60 minutes, or until golden brown. After 45 minutes, if the top is getting too brown, cover it loosely with aluminum foil. Oven times can vary, so go by doneness rather than strictly by time.
08 -
This is important - let the cake cool completely so it can set up. This takes at least 2 hours. If you cut into it while it's hot, it'll be really runny. As it cools, it sets into a perfect cobbler-like consistency.
