Preheat your air fryer to 400°F. This ensures even cooking and a crispy crust from the start.

In a small bowl, mix together the grated Parmesan cheese and Italian seasoning. This will be your flavor base for both the crust and topping.

Brush both tortillas with olive oil or spray with cooking spray on one side. Sprinkle half of the Parmesan-Italian seasoning mixture over the oiled side of each tortilla, reserving the rest for topping.

Spread pizza sauce evenly on each tortilla, leaving a small border around the edges. Top with pepperoni slices and shredded mozzarella cheese. Sprinkle the remaining seasoning mixture over the cheese.

Spray the air fryer basket with cooking spray. Carefully place one tortilla pizza in the air fryer basket and cook for 4-5 minutes until the edges are golden brown and the cheese is fully melted and bubbly.

Once done, remove the air fryer basket from the unit but leave the pizza in the basket for 2-3 minutes. This allows the bottom to crisp up even more from the residual heat.

Using a spatula, carefully remove the first pizza from the basket. Cook the second pizza following the same process.

Cut each pizza into triangles using a pizza cutter or sharp knife. Serve immediately while hot and crispy.
