Air Fryer Twice Baked Potatoes (Print Version)

# Ingredients:

01 - 3 medium russet potatoes.
02 - 1-2 tablespoons olive oil.
03 - Kosher salt to taste.
04 - 2 tablespoons soft butter.
05 - ¼ teaspoon black pepper.
06 - 1 teaspoon garlic powder.
07 - 1 teaspoon onion powder.
08 - 2 cups shredded cheddar.
09 - 1 cup sour cream.
10 - 2 slices cooked bacon, crumbled.
11 - Green onions for garnish.

# Instructions:

01 - Wash and dry potatoes, brush with oil, add salt and poke holes with fork.
02 - Cook at 400°F for 30 minutes in air fryer, flipping halfway.
03 - Let cool 10 minutes, cut in half and scoop out inside leaving thin shell.
04 - Mix potato with butter, seasonings, 1½ cups cheese and sour cream until smooth.
05 - Fill shells with mixture, top with remaining cheese and bacon.
06 - Return to air fryer for 5-7 minutes until cheese melts.
07 - Garnish with green onions and serve hot.

# Notes:

01 - Can be stored in fridge up to 4 days.
02 - Can freeze up to 2 months.
03 - Reheat at 350°F for 10-15 minutes.
