Apple Mini Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 1½ cups graham crackers, finely crushed
02 - ½ teaspoon ground cinnamon
03 - 4 tablespoons melted butter

→ Cheesecake

04 - 8 oz cream cheese, room temperature
05 - ½ cup sour cream
06 - 2 teaspoons vanilla extract
07 - ½ cup granulated sugar
08 - 2 tablespoons brown sugar
09 - 1 egg

→ Apple Topping

10 - 2 cups peeled and diced apples
11 - ⅓ cup water
12 - ½ cup brown sugar
13 - ½ teaspoon ground cinnamon
14 - Pinch of salt
15 - 1 tablespoon cornstarch mixed with 1 tablespoon water

# Instructions:

01 - Process graham crackers into fine crumbs. Mix with melted butter and cinnamon. Press into lined muffin tin. Chill.
02 - Beat room temperature cream cheese until smooth. Add sour cream, egg, sugars, and vanilla. Mix until smooth.
03 - Divide filling among crusts. Bake at 325°F for 20 minutes. Cool 1 hour at room temperature, then chill 3 hours.
04 - Cook apples, water, sugar, cinnamon, and salt until tender. Add cornstarch slurry to thicken. Cool completely.
05 - Top chilled cheesecakes with cooled apple topping.
