# Ingredients:

01 - 1 1/2 pounds zucchini.
02 - 1 1/2 cups seasoned panko breadcrumbs.
03 - 2 large eggs, beaten.
04 - 3/4 cup Parmesan cheese, freshly grated.
05 - 2 cloves garlic, minced.
06 - 1 teaspoon dried basil.
07 - 2 teaspoons dried parsley.
08 - 1 teaspoon kosher salt.
09 - 1/2 teaspoon black pepper.

# Instructions:

01 - Heat oven to 400°F. Line baking sheet with parchment. Grate zucchini and squeeze out moisture thoroughly.
02 - Combine squeezed zucchini with breadcrumbs, eggs, cheese, garlic and seasonings until well mixed.
03 - Shape into 20 balls using gentle squeezing motion rather than rolling. Place on prepared pan.
04 - Bake 15 minutes, flip, then 15 minutes more until golden and firm.
