Baked Zucchini and Cheese (Print Version)

# Ingredients:

01 - 2 large zucchini, diced.
02 - 1 onion, chopped.
03 - 1 cup grape tomatoes, halved.
04 - 1 green bell pepper, diced.
05 - 2 tablespoons olive oil.
06 - 1 teaspoon garlic powder.
07 - 1 teaspoon Italian seasoning.
08 - 1/2 teaspoon salt.
09 - 1 teaspoon black pepper.
10 - 1 cup mozzarella cheese.
11 - 1 tablespoon parsley.
12 - 1/2 teaspoon chili flakes.

# Instructions:

01 - Preheat oven to 375°F. Combine vegetables, half cheese, seasonings, oil in baking dish.
02 - Bake uncovered 20 minutes until vegetables nearly tender.
03 - Top with remaining cheese, bake 10 minutes more until browned. Garnish with parsley and chili flakes.

# Notes:

01 - Can add parmesan for extra flavor.
02 - Salt zucchini first to prevent sogginess.
03 - Keeps 2 days refrigerated.
