BBQ Chicken Quesadillas (Print Version)

01 - 2 cups chicken, shredded
02 - 1½ cups BBQ sauce
03 - 6 tortillas, 8 inch
04 - 2 cups cheddar cheese, shredded

# Instructions:

01 - In a large bowl, mix the shredded chicken with the BBQ sauce until well coated.
02 - Heat one side of a tortilla in a clean skillet over low-medium heat.
03 - Sprinkle cheese on half of the tortilla, then add the BBQ chicken mixture. Sprinkle more cheese on top of the chicken.
04 - Fold the tortilla in half, flip it over, and warm the other side until some brown spots form and the cheese is melted. Repeat with all remaining tortillas.
05 - Serve immediately while hot and crispy.

01 - This recipe is perfect for using up leftover BBQ chicken or rotisserie chicken.
02 - Great as a lunch, light supper, after-school snack, or appetizer.
03 - Cook on low-medium heat to ensure the cheese melts completely without burning the tortilla.
