Beefy Cheesy Fries Burrito (Print Version)

# Ingredients:

01 - 1 pound ground beef (80/20 blend) or thinly sliced steak
02 - 1 packet taco seasoning
03 - 3 cups frozen French fries
04 - 1 cup sharp cheddar cheese, shredded
05 - 1 cup Monterey Jack cheese, shredded
06 - ½ cup whole milk
07 - 4 large flour tortillas
08 - Sour cream (optional)
09 - Hot sauce (optional)
10 - Guacamole (optional)
11 - Pico de gallo (optional)

# Instructions:

01 - Heat a large skillet over medium-high heat. Add ground beef and cook for 6-8 minutes, breaking it up with a spoon, until browned and slightly crispy. Sprinkle with taco seasoning and cook 1 more minute. Set aside.
02 - While the beef cooks, prepare the French fries according to package directions using your oven, air fryer, or deep fryer. Cook until golden and crispy. Season with salt while hot.
03 - In a small saucepan over low heat, combine shredded cheddar, Monterey Jack, and milk. Stir continuously until melted and smooth, creating a creamy cheese sauce. Keep warm.
04 - Heat tortillas in a dry skillet for 30 seconds per side, or wrap in damp paper towels and microwave for 30 seconds to make them pliable.
05 - On each tortilla, place about ¼ of the seasoned beef down the center, followed by ¾ cup of crispy fries. Drizzle generously with cheese sauce and add any optional toppings you desire.
06 - Fold the bottom edge up over the filling, fold in the sides, then roll tightly from bottom to top. Make sure the burrito is snug to prevent filling from spilling out.
07 - Heat the same skillet over medium heat. Place burritos seam-side down and toast for 1-2 minutes per side until golden brown and crispy all over.
08 - Let cool for 1-2 minutes before cutting in half diagonally. Serve immediately while the cheese is still melted and the fries are crispy.

# Notes:

01 - Cook fries until extra crispy to maintain texture inside the burrito
02 - Don't overfill the tortillas or they'll be impossible to roll
03 - Keep cheese sauce warm to prevent it from thickening too much
04 - Toast the burritos seam-side down first to seal them closed
05 - These freeze well wrapped individually in foil
