Berry Brûlée (Print Version)

# Ingredients:

01 - 1/2 cup heavy cream, chilled.
02 - 12 ounces fresh raspberries.
03 - 3 tablespoons plus 1 teaspoon granulated sugar, divided.

# Instructions:

01 - Using mixer with whisk attachment, whip heavy cream with 1 teaspoon sugar until soft peaks form.
02 - Mix berries and whipped cream together in a heat-safe dish.
03 - Sprinkle remaining sugar over top in sections. Use kitchen torch to caramelize each section before moving to next area.
04 - Place in freezer for 5-10 minutes until sugar hardens.
05 - Serve immediately, optionally with pound cake or angel food cake.

# Notes:

01 - Use fresh berries only, not frozen. Can use strawberries or blackberries instead of raspberries.
02 - Large berries should be cut in half, small ones left whole.
