Birria Tacos (Print Version)

# Ingredients:

01 - 3 pounds beef chuck roast.
02 - 3 chipotle peppers in adobo.
03 - 1/2 cup crushed tomatoes.
04 - 3 garlic cloves.
05 - 1 yellow onion.
06 - 1 tablespoon ancho chile powder.
07 - 1 teaspoon oregano.
08 - 1 teaspoon cumin.
09 - 1 teaspoon paprika.
10 - 1/4 teaspoon cloves.
11 - 1/2 teaspoon cinnamon.
12 - 1/4 cup apple cider vinegar.
13 - 2 cups grapeseed oil.
14 - 12 dried red chiles.
15 - 2/3 cup peanuts.
16 - 2 tablespoons sesame seeds.
17 - 12 corn tortillas.
18 - 2 cups Monterey Jack cheese.

# Instructions:

01 - Blend chipotles, tomatoes, garlic, onion and spices with water.
02 - Brown seasoned beef in Instant Pot. Add sauce, cook 40 minutes high pressure.
03 - Fry chiles, onion, garlic in oil. Add nuts and seeds. Blend.
04 - Dip tortillas in beef broth, fill with meat and cheese, fry until crispy.

# Notes:

01 - Can use Dutch oven instead.
