Biscuits and Gravy Casserole (Print Version)

# Ingredients:

→ For the Sausage and Gravy

01 - 1 lb ground pork sausage (maple flavor preferred)
02 - 3 tablespoons butter (plus more for greasing)
03 - 1/4 cup all-purpose flour
04 - 2 cups milk
05 - 2 teaspoons Cajun seasoning
06 - Salt and pepper to taste

→ For the Casserole

07 - 8-count can flaky layers biscuits (16 oz tube, like Pillsbury Grands)
08 - 2 cups shredded Colby Jack cheese
09 - 6 large eggs
10 - 1/2 cup half and half
11 - 1/2 teaspoon cracked black pepper
12 - 1/4 teaspoon salt
13 - Pancake or maple syrup for serving

# Instructions:

01 - Heat your oven to 350 degrees. Lightly grease a 9x13 inch baking dish with butter.
02 - Cook the sausage in a large pan over medium-low heat, breaking it up into crumbles as it browns. Once it's cooked through, transfer it to a plate but leave the drippings in the pan.
03 - Melt the butter in the same pan with the drippings. Sprinkle the flour over the butter and whisk constantly for about 1 minute. Gradually add the milk, whisking as you pour, until the gravy comes together. Make sure to scrape up all those tasty brown bits from the bottom of the pan.
04 - Add the Cajun seasoning and season liberally with salt and pepper - gravy needs plenty of seasoning to be really delicious! Taste and adjust as needed. Set aside.
05 - Add the biscuits to the bottom of the prepared baking dish. Press them down a few times until they cover most of the bottom layer of the pan - they don't have to be perfect.
06 - Scatter the cooked sausage over the biscuits, then top with the shredded cheese.
07 - In a medium bowl, whisk together the eggs, half and half, salt, and pepper. Pour this mixture evenly over the biscuits and sausage, making sure to cover edge to edge.
08 - Pour the gravy over the top of the entire casserole. Place in the oven and bake for 35 to 45 minutes. The casserole is done when it has puffed up and is golden brown on top.
09 - Let it rest for a few minutes before slicing and serving. This is best enjoyed warm with a drizzle of pancake syrup on top!

01 - Maple-flavored sausage adds a nice sweet-savory flavor that pairs perfectly with syrup.
02 - Don't skip seasoning the gravy generously - it needs plenty of salt and pepper to taste good!
03 - If you don't have Cajun seasoning, use a mix of paprika, garlic powder, onion powder, and a pinch of cayenne.
04 - This is perfect for feeding a crowd at Christmas, Easter, or church potlucks!
