Blackened Spinach Stuffed Salmon (Print Version)

# Ingredients:

→ Salmon

01 - 4 salmon fillets (6 ounces each)

→ Filling

02 - 2 cups fresh spinach
03 - 1 cup grated Parmesan cheese
04 - 1 cup cream cheese, softened
05 - 2 garlic cloves, minced
06 - 1 tablespoon olive oil

→ Blackening Seasoning

07 - 1 teaspoon paprika
08 - 1 teaspoon cayenne pepper
09 - 1 teaspoon garlic powder
10 - 1 teaspoon onion powder
11 - Salt and pepper to taste

→ Serving

12 - Lemon wedges

# Instructions:

01 - Preheat oven to 375°F. Grease baking sheet.
02 - Sauté garlic and spinach until wilted. Cool, then mix with cream cheese and Parmesan.
03 - Cut horizontal pocket in each salmon fillet.
04 - Mix blackening spices and rub over salmon.
05 - Fill each pocket with spinach-cheese mixture.
06 - Cook 15-20 minutes until salmon flakes easily.

# Notes:

01 - Can reduce cayenne for milder spice
02 - Can use thawed frozen spinach
03 - Can grill 6-8 minutes per side instead of baking
