Blueberry, Feta and Honey-Caramelized Onion Naan Pizza (Print Version)

01 - 2 naan flatbreads
02 - 1 teaspoon olive oil
03 - 1 cup thinly sliced red onion
04 - Kosher salt, to taste
05 - Pinch of red pepper flakes
06 - 2 tablespoons honey
07 - 1/2 cup ricotta cheese
08 - 1/2 cup feta cheese
09 - 1 cup fresh blueberries
10 - Micro arugula or regular baby arugula, for garnish

# Instructions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper. Arrange the naan on the baking sheet and lightly spray or brush with water. Set aside.
02 - Heat olive oil in a medium pan over medium-low heat. Add sliced onions, season with a pinch of salt and red pepper flakes, and cook until wilted, about 3-5 minutes. Stir in honey and let the onions caramelize. Remove from heat.
03 - In a small bowl, mix ricotta and feta cheese until evenly combined.
04 - Spread the ricotta and feta mixture over the naan. Top with honey-caramelized onions and sprinkle blueberries evenly on top.
05 - Bake naan pizzas in the oven for about 10 minutes, or until blueberries are about to burst, cheese is softened, and naan is toasted. Remove from oven and garnish with arugula before serving.
