Creamy One-Pot Chicken Dinner (Print Version)

# Ingredients:

01 - 1 tablespoon olive oil
02 - 2 tablespoons butter
03 - 1/2 medium onion, chopped
04 - 2 cloves garlic, minced
05 - 1 cup uncooked orzo pasta
06 - 2.5 cups chicken or vegetable broth

→ Finishing Ingredients

07 - 1 (5.2 oz) package Boursin cheese, softened
08 - 2 cups packed fresh baby spinach
09 - 2 cups cooked chicken, chopped or shredded
10 - Salt and pepper to taste
11 - Fresh chives, chopped (for garnish)

# Instructions:

01 - Heat oil and butter in a pot over medium-high heat. Add onion and cook until softened, about 3-4 minutes.
02 - Add garlic and orzo to the pot. Cook for 2-3 minutes, stirring often to toast the pasta and enhance its flavor.
03 - Pour in the broth and let it bubble. Cook uncovered for 10 minutes, stirring frequently. Reduce heat as needed to maintain a gentle simmer.
04 - Stir in the Boursin cheese until completely melted and smooth.
05 - Remove from heat. Stir in spinach and chicken, cover and let stand for 5 minutes until spinach wilts and chicken warms through.
