Heat vegetable oil in a medium skillet over medium heat. Add the diced onions and cook for about 5 minutes until they're soft and translucent.

Add the beaten eggs to the skillet with onions. Gently pull the eggs across the pan with a spatula as they cook, repeating until no liquid egg remains. Season with salt and pepper, then set aside to cool.

Remove biscuits from the can and place on a clean work surface. Using a rolling pin, flatten each biscuit to about ⅛-inch thickness, creating larger circles.

Evenly distribute the cooled egg mixture on half of each flattened biscuit, leaving space around the edges. Top each with ¼ cup shredded cheese and crumbled bacon.

Wet your finger with water and run it around the rim of each biscuit. Fold into a half-moon shape and press the edges with a fork to create a tight seal.

Spray your air fryer basket with cooking spray. Working in batches, place the hand pies in the basket and spray the tops. Air fry at 360°F for 5 minutes.

Carefully flip the hand pies over and air fry for another 4 minutes until golden brown and crispy on both sides.

While the hand pies cook, mix the melted butter with onion powder and chopped parsley in a small bowl.

Remove hand pies and brush with the seasoned butter mixture. Return to air fryer for 1 more minute to set the butter coating.

Remove from air fryer and serve immediately while hot and crispy. Great with ketchup, salsa, or hot sauce on the side.
