Brown Sugar Carrots (Print Version)

# Ingredients:

01 - 2 lb (1 kg) carrots, peeled.
02 - 1/4 cup (40g) brown sugar, loosely packed.
03 - 2 garlic cloves, minced.
04 - 2 tbsp (30g) butter, melted (or olive oil).
05 - 1 tbsp olive oil.
06 - 1/2 tsp salt.
07 - 1/4 tsp black pepper.
08 - Fresh parsley for garnish (optional).

# Instructions:

01 - Preheat the oven to 425°F (220°C), or 400°F (200°C) if using a fan oven.
02 - Cut the carrots on the diagonal into 1.75” (4cm) lengths. Halve the thicker ends to ensure uniform width.
03 - In a bowl, toss the carrots with brown sugar, melted butter, garlic, olive oil, salt, and pepper until evenly coated.
04 - Spread the carrots onto a baking tray in a single layer.
05 - Roast for 15 minutes, toss, then continue roasting for another 10 minutes, until the edges are caramelized and the glaze is thickened.
06 - Toss the roasted carrots in the remaining glaze and sprinkle with fresh parsley before serving.

01 - Serve immediately as a side dish.
02 - Optional garnish with fresh parsley for a burst of color.
