Butter Poached Lobster Risotto (Print Version)

# Ingredients:

01 - 8 lobster tails.
02 - 1 cup butter.
03 - 1 cup Arborio rice.
04 - 4 cups chicken broth.
05 - 1 small onion, diced.
06 - 3 garlic cloves, minced.
07 - ½ cup Parmesan cheese.
08 - 2 tbsp butter.
09 - 2 tbsp parsley, chopped.
10 - 1 lemon.
11 - Sea salt.
12 - Smoked paprika.
13 - Black pepper.

# Instructions:

01 - Heat broth in pot.
02 - Sauté onion and garlic in butter.
03 - Add rice, toast 2-3 minutes.
04 - Add hot broth gradually, stir until absorbed. Cook rice 20-25 minutes until creamy.
05 - Stir in Parmesan.
06 - Boil lobster 7 minutes, place into ice bath, peel.
07 - Melt butter with seasonings.
08 - Poach lobster 1-1.5 minutes in butter sauce.
09 - Plate risotto, top with lobster. Drizzle butter sauce, add lemon.
