Cajun White Chicken Chili (Print Version)

# Ingredients:

01 - 1 tablespoon oil.
02 - 1 pound andouille sausage, sliced.
03 - 1 pound chicken breasts or thighs.
04 - 2 tablespoons cajun seasoning, divided.
05 - 1 tablespoon butter.
06 - 1 cup onion, diced.
07 - 1 cup celery, diced.
08 - 1 cup bell pepper, diced.
09 - 1 jalapeño, diced.
10 - 4 cloves garlic, chopped.
11 - 1 teaspoon cumin.
12 - 4 cups chicken broth.
13 - 2 cans white beans, drained.
14 - ½ cup salsa verde.
15 - ½ cup sour cream.
16 - ¼ cup parmesan cheese.
17 - 1 tablespoon lime juice.
18 - Cilantro and green onions for garnish.

# Instructions:

01 - Brown sausage 5-7 minutes, remove. Season chicken with cajun spice, cook 5-7 minutes, remove.
02 - Sauté onion, celery, peppers in butter 7-10 minutes. Add garlic, spices for 1 minute.
03 - Add broth, beans, salsa, meats. Boil then simmer 15 minutes.
04 - Shred chicken, return to pot. Add dairy and garnishes.

01 - Can be made in slow cooker.
02 - Adjust heat by varying peppers.
03 - Add corn or extra toppings if desired.
