In a saucepan, melt butter over medium heat. Add brown sugar, granulated sugar, cinnamon, nutmeg, and a pinch of salt. Simmer while stirring for about 5 minutes until smooth. Stir in vanilla.

Pour the glaze over the sweet potatoes, ensuring all slices are coated evenly.

Cover the dish with vented aluminum foil and bake for 30 minutes.

Remove the foil, stir to coat the sweet potatoes again, and re-cover. Bake for another 25 minutes.
