# Ingredients:

10 - 1 lb puff pastry, thawed, for the flaky base.
11 - 1 egg, beaten, for brushing the pastry.

# Instructions:

01 - Preheat oven to 400°F and line two baking sheets with parchment paper.
02 - Caramelize onions: Heat oil in a large skillet over low heat. Add onions and a pinch of salt. Cook for 30 minutes, stirring occasionally, until golden and caramelized. Set aside.
03 - Cook mushrooms: In the same skillet, sauté mushrooms until tender, about 5 minutes. Transfer to the onion mixture.
04 - Cook apples: Add butter to the skillet and cook apples with sugar until tender, about 10 minutes. Add to the bowl with onions and mushrooms.
05 - Combine filling: Stir in Gruyère cheese, chives, and thyme. Season with salt and pepper to taste.
06 - Assemble: Roll out puff pastry and cut into 2-inch squares. Place squares on the prepared baking sheets and brush with beaten egg. Spoon filling onto the center of each square.
07 - Bake: Bake for 25 minutes, rotating pans halfway through, until the bites are golden and crispy.
