Carne con Papas (Print Version)

# Ingredients:

01 - 2 pounds beef chuck roast, 1-inch cubes.
02 - 3 teaspoons kosher salt, divided.
03 - 1 teaspoon black pepper.
04 - 1 teaspoon garlic powder.
05 - ½ teaspoon dried oregano.
06 - ½ teaspoon ground cumin.
07 - 2 tablespoons olive oil.
08 - 4 Roma tomatoes, quartered.
09 - ½ white onion.
10 - 1 serrano pepper, stemmed.
11 - 2 cloves garlic.
12 - 2 cups beef broth.
13 - 1 bay leaf.
14 - 2 large russet potatoes, cubed.
15 - ½ cup cilantro, chopped.

# Instructions:

01 - Toss beef with 2½ teaspoons salt, pepper, garlic powder, oregano, and cumin.
02 - Brown meat in oil over medium-high heat, about 10 minutes.
03 - Blend tomatoes, onion, pepper, garlic, ½ teaspoon salt, and broth until smooth.
04 - Strain sauce into pot. Add bay leaf, simmer covered 10 minutes.
05 - Add potatoes, cook 25 minutes. Stir in cilantro, rest 10 minutes.

# Notes:

01 - Use jalapeño or omit pepper for less heat.
02 - Let rest to thicken sauce.
03 - Serve with rice and tortillas.
