Carne en su Jugo (Print Version)

# Ingredients:

01 - 12 ounces bacon, chopped.
02 - 2½ pounds beef strip steak, sliced bite-sized.
03 - 3 teaspoons kosher salt, divided.
04 - 6 tomatillos, husked and rinsed.
05 - 3 serrano peppers, stemmed and seeded.
06 - 1 cup packed cilantro, chopped, plus more for topping.
07 - 3 cloves garlic.
08 - ½ teaspoon ground cumin.
09 - ½ teaspoon ground black pepper.
10 - 3 cups water.
11 - 2 (15-ounce) cans pinto beans, drained and rinsed.
12 - Chopped white onion for serving.
13 - Sliced radishes for serving.
14 - Lime wedges for serving.

# Instructions:

01 - Cook chopped bacon in large pot over medium heat for 10 minutes until crispy. Remove to bowl.
02 - Season beef with 1 teaspoon salt. Brown in bacon fat for 10 minutes.
03 - Blend tomatillos, serranos, ½ cup cilantro, garlic, cumin, pepper, water, and 2 teaspoons salt until smooth.
04 - Add sauce to browned meat. Bring to boil, reduce heat, cover and cook 30-35 minutes until meat is tender.
05 - Add beans and cook 2 minutes more. Serve topped with bacon, onions, cilantro, radishes and lime.

# Notes:

01 - Can substitute olive oil for bacon if preferred.
