Potato Cheese Puffs (Print Version)

# Ingredients:

01 - 2 cups mashed potatoes.
02 - 1 cup shredded cheddar cheese.
03 - 1/4 cup grated Parmesan cheese.
04 - 2 large eggs.
05 - 1/4 cup milk.
06 - 2 green onions, chopped.
07 - 1/2 teaspoon garlic powder.
08 - 1/2 teaspoon smoked paprika (optional).
09 - Salt and pepper to taste.

# Instructions:

01 - Heat oven to 400°F. Grease muffin tin.
02 - Mix potatoes, cheeses, eggs, milk, onions, and seasonings until smooth.
03 - Fill muffin cups 3/4 full with mixture.
04 - Bake 20-25 minutes until golden and set.
05 - Cool slightly before removing from tin.

01 - Use starchy potatoes for best results.
02 - Can add bacon or ham.
03 - Top with extra cheese before baking.
04 - Serve with sour cream.
