Cherry Cheesecake Chimichangas (Print Version)

# Ingredients:

01 - 6 (8-inch) soft flour tortillas.
02 - 8 oz cream cheese, softened.
03 - 4 teaspoons sugar.
04 - 1 teaspoon vanilla extract.
05 - 1½ cups cherries from pie filling.
06 - Vegetable oil for frying.
07 - 1 tablespoon cinnamon.
08 - ½ cup sugar (for coating).

# Instructions:

01 - Mix cream cheese, sugar, and vanilla together until smooth.
02 - Spread cream cheese mixture on lower third of each tortilla.
03 - Place ¼ cup cherries on cream cheese mixture.
04 - Fold tortilla sides in, then roll up tight like a burrito. Stick a toothpick in each to hold them closed.
05 - Mix ½ cup sugar with cinnamon in a shallow bowl.
06 - Heat 2½ inches oil in a deep pan over medium-high heat.
07 - Fry chimichangas until golden brown, about 2-3 minutes each side.
08 - Drain on paper towels for a minute. Roll in cinnamon-sugar mixture.
09 - Remove toothpicks before serving.
