Chicken Alfredo Pasta (Print Version)

# Ingredients:

01 - 8 ounces fettuccine pasta.
02 - 2 chicken breasts (1 pound).
03 - 1 teaspoon kosher salt.
04 - 1/2 teaspoon black pepper.
05 - 2 tablespoons canola oil.
06 - 8 tablespoons unsalted butter.
07 - 2 garlic cloves, minced.
08 - 1 cup heavy cream.
09 - 1 cup grated Parmesan.
10 - 1/4 teaspoon nutmeg.
11 - Fresh parsley for garnish.

# Instructions:

01 - Boil pasta in salted water until al dente. Save some pasta water before draining.
02 - Season chicken with salt and pepper.
03 - Pan-fry chicken until golden and cooked through. Let rest then slice.
04 - Cook garlic in butter. Add cream, cheese, nutmeg, salt and pepper. Simmer until thickened.
05 - Toss pasta with sauce, adding pasta water if needed. Top with chicken and parsley.

01 - Use freshly grated parmesan for best results.
02 - Save pasta water to adjust sauce thickness.
03 - Best served immediately.
