Casserole with roasted potato chunks, chicken, broccoli florets, and garlic tossed in creamy sour cream sauce, topped with melted cheese and baked until golden.

# Ingredients:

→ For the Casserole

01 - 2 chicken breasts, cut into bite-sized pieces
02 - 6 small yellow potatoes, cut into small chunks (about 3 cups)
03 - 1 teaspoon olive oil
04 - 2 cups chopped broccoli florets
05 - 4 cloves garlic, minced
06 - 1 cup sour cream
07 - 1/2 cup mayonnaise
08 - 1/2 teaspoon fine sea salt
09 - 1/2 teaspoon black pepper
10 - 1 cup shredded cheese

# Instructions:

01 - Heat your oven to 375 degrees and lightly grease an 8x11 inch casserole dish. Line a baking sheet with parchment paper and set aside.
02 - Cut the potatoes into small cubes and transfer them to the lined baking sheet. Drizzle with olive oil and toss to coat. Spread the potatoes out evenly on the sheet. Roast in the oven for 20 minutes, flipping them halfway through.
03 - While the potatoes are roasting, cut the chicken into bite-sized pieces. Add them to a large mixing bowl and season with salt and pepper.
04 - Chop the broccoli into small florets and add them to the bowl with the chicken. Mince the garlic and add that too.
05 - Add the cooked potatoes to the bowl and stir everything together. Pour in the sour cream and mayonnaise and mix well to coat all the ingredients.
06 - Spread the mixture into the prepared casserole dish. Sprinkle the shredded cheese evenly over the top. Place the dish in the oven and bake for 45 to 50 minutes, until the top is browned and bubbling and the chicken is cooked through.
07 - Let the casserole rest for 5 minutes before serving. This helps everything set up nicely!

# Notes:

01 - Roasting the potatoes first gives them great texture and prevents them from being undercooked in the casserole.
02 - Cut the chicken and vegetables into similar-sized pieces so everything cooks evenly.
03 - Store leftovers in an airtight container in the fridge for 2-3 days. Reheat in the oven or microwave.
04 - We don't recommend freezing this - the sour cream sauce can become grainy and separated after thawing.
05 - This is perfect for meal prep or feeding a crowd!
