Chicken Broccoli Rice Casserole (Print Version)

# Ingredients:

01 - 2 tablespoons butter.
02 - 2 boneless skinless chicken breasts.
03 - 1 teaspoon Italian seasoning.
04 - 2½ cups chicken broth.
05 - 1 tablespoon olive oil.
06 - 1¼ cups white long grain rice.
07 - 2 cups fresh broccoli florets.
08 - 10.5 ounces condensed cream of chicken soup.
09 - ½ cup milk.
10 - ½ cup sour cream.
11 - 2 cups shredded cheddar cheese.
12 - ½ teaspoon dried thyme.
13 - ½ teaspoon garlic powder.
14 - 1 cup crushed Ritz crackers.
15 - 2 tablespoons melted butter for topping.

# Instructions:

01 - Preheat oven to 350°F. Cut chicken into pieces and season.
02 - Brown seasoned chicken in butter until cooked through.
03 - Cook rice in broth 6 minutes, add broccoli and cook 9 more minutes.
04 - Let covered rice stand 10 minutes off heat.
05 - Combine rice mixture with chicken, soup, milk, sour cream and cheese.
06 - Transfer to casserole dish, top with cheese and Ritz crumbs. Bake 25 minutes total.

01 - Can use rotisserie chicken.
02 - Can make ahead and freeze.
03 - Add topping just before baking.
