Chicken Cordon Bleu (Print Version)

# Ingredients:

01 - 4 chicken breasts, boneless and skinless.
02 - Salt to taste.
03 - Pepper to taste.
04 - 1 tablespoon garlic powder.
05 - 1 tablespoon onion powder.
06 - 16 slices Swiss cheese.
07 - ½ pound ham, thinly sliced.
08 - Peanut or vegetable oil for frying.
09 - 1 cup all-purpose flour.
10 - 4 eggs, beaten.
11 - 2 cups panko breadcrumbs.
12 - 3 tablespoons butter.
13 - 2 cloves garlic, minced.
14 - 3 tablespoons all-purpose flour.
15 - 2 cups milk.
16 - ¼ cup Dijon mustard.
17 - 1 cup Parmesan cheese, shredded.
18 - Salt to taste.
19 - Pepper to taste.

# Instructions:

01 - Season chicken with salt, pepper, garlic and onion powder.
02 - Pound chicken between plastic wrap to ½ inch thick.
03 - Layer each breast with: 2 slices Swiss cheese, 2 slices ham, 2 more slices Swiss cheese, 2 more slices ham.
04 - Roll chicken tightly in plastic wrap, twist ends, Chill rolls for 30 minutes.
05 - Heat oil to 325°F in deep pan.
06 - Dish 1: flour, Dish 2: beaten eggs, Dish 3: panko.
07 - Coat each roll in flour, then egg, then panko.
08 - Fry 5 minutes per side until golden, finish in a 325°F oven if needed until internal temp reaches 165°F.
09 - Melt butter, cook garlic until soft. Whisk in flour for 1 minute. Add milk, whisk until thickened. Stir in mustard and Parmesan. Season with salt and pepper.

01 - Make sure chicken is well-chilled before breading and frying.
02 - Keep oil at steady temperature for even cooking.
03 - Sauce can be made ahead and reheated.
