One-Pan Fajita Rice Bowls (Print Version)

# Ingredients:

→ Protein & Vegetables

01 - 1 1/4 pounds chicken breasts, diced
02 - 1 cup diced yellow onion
03 - 3 cups chopped bell pepper
04 - 3 cloves garlic, minced

→ Base

05 - 1 2/3 cups low-sodium chicken broth
06 - 1 (15 oz) can fire roasted tomatoes
07 - 1 (15 oz) can black beans, drained
08 - 2 cups instant brown rice

→ Seasonings

09 - 2 1/2 tablespoons olive oil
10 - 2 1/2 teaspoons chili powder
11 - 1 1/2 teaspoons ground cumin
12 - 1 1/2 tablespoons fresh lime juice
13 - Salt and pepper to taste

→ Toppings

14 - 3/4 cup shredded Mexican cheese
15 - 1/3 cup chopped cilantro

# Instructions:

01 - Heat oil, cook seasoned chicken pieces until done, about 7 minutes. Wrap in foil to keep warm.
02 - Cook onions 3 minutes, add peppers for 3 more minutes, then garlic for 1 minute.
03 - Add broth, tomatoes, beans, and remaining seasonings. Bring to boil.
04 - Add rice, cover and simmer 6-7 minutes. Rest 5 minutes off heat.
05 - Stir in chicken, lime juice, cheese and cilantro.
