                Set to 350°F (175°C).

                Freeze the cookie dough for a few hours to make slicing easier.

                Line a 13x9" pan with parchment paper or non-stick foil.

                Slice half of the cookie dough into ¼" slices and press into the bottom of the pan. Bake for 10 minutes.

                Beat softened cream cheese, egg, sugar, vanilla, and lemon juice (if using) until smooth. Spread evenly over the baked crust.

                Slice the remaining cookie dough and layer it on top of the cheesecake mixture.

                Return to the oven for 35-40 minutes, or until set and golden.

                Cool completely, then refrigerate before serving.
