Chocolate Covered Strawberry Poke Cake (Print Version)

# Ingredients:

→ For the Cake

01 - 1 box (15.25 oz) strawberry cake mix
02 - Ingredients listed on cake mix box (typically eggs, oil, and water)

→ For the Pudding Layer

03 - 4 cups milk
04 - 2 boxes (3.3 oz each) instant white chocolate pudding mix

→ For the Toppings

05 - 8 oz container Cool Whip
06 - 12 oz fresh strawberries, quartered
07 - 7 oz melting chocolate (Baker's dipping chocolate, almond bark, or chocolate chips)

# Instructions:

01 - Mix together the strawberry cake mix following the directions on the box. Pour the batter into a greased 9x13 inch baking dish and bake according to package directions. Once fully baked, let it cool for about 10 minutes.
02 - Use the handle of a wooden spoon to poke holes all over the cake - make them pretty deep so the pudding can soak in.
03 - Mix together the pudding mix and 4 cups of milk following the directions on the package. Pour the pudding over the cake before it completely thickens - work quickly! Let it sit on the counter for about 5 minutes so the pudding can settle into the holes.
04 - Spread the Cool Whip evenly over the top of the pudding layer.
05 - Melt the chocolate in the microwave, stirring in short 15 to 30 second bursts until it's smooth and completely melted.
06 - Arrange the quartered strawberries on top of the Cool Whip, then drizzle the melted chocolate over everything.
07 - Put the finished cake in the fridge for a couple hours so the chocolate and pudding can set properly. Then it's ready to serve and enjoy!

# Notes:

01 - Any brand of strawberry cake mix works - just follow the directions on the box to prepare it.
02 - You can use as many strawberries as you like - the recipe calls for 1 pint quartered, but more is always good!
03 - White chocolate pudding is recommended, but vanilla or even chocolate pudding would work if you prefer.
04 - Store leftovers covered in the refrigerator for up to 3 days.
05 - Baker's microwavable dipping chocolate makes this super easy, but almond bark or chocolate chips work great too.
