# Ingredients:

01 - 2¼ cups bread flour.
02 - 1 large egg, room temperature.
03 - ½ cup + 2 tablespoons warm milk.
04 - 3 tablespoons unsalted butter, room temperature.
05 - 5 tablespoons granulated sugar.
06 - 1 teaspoon salt.
07 - 1 envelope instant yeast (7g).
08 - 2¼ cups whole milk.
09 - 2 teaspoons vanilla extract.
10 - 2 tablespoons unsweetened cocoa powder.
11 - 3 egg yolks, room temperature.
12 - 1 egg, room temperature.
13 - ½ cup granulated sugar.
14 - 2½ tablespoons cornstarch.
15 - ¼ teaspoon salt.
16 - 8 oz bittersweet or semisweet chocolate, chopped.
17 - 2 tablespoons unsalted butter, softened.

# Instructions:

01 - Mix warm milk, egg, and yeast until dissolved.
02 - Add sugar, flour, and salt to make dough.
03 - Knead in softened butter until smooth.
04 - Let rise 2-3 hours until doubled.
05 - Whisk sugar, eggs, cornstarch, cocoa, and salt.
06 - Heat milk and vanilla until boiling.
07 - Slowly whisk hot milk into egg mixture.
08 - Cook until thick, add chocolate and butter.
09 - Chill custard 2-4 hours.
10 - Shape dough into 8 balls.
11 - Let rest 30-40 minutes.
12 - Fry in 350°F oil until golden.
13 - Cool, roll in sugar.
14 - Fill with chocolate custard.
