Fudgy Pumpkin Cookies (Print Version)

# Ingredients:

→ For the Cookie Dough

01 - 3/4 cup packed brown sugar
02 - 1/2 cup vegetable oil
03 - 1 cup pumpkin puree
04 - 1 large egg
05 - 1 teaspoon vanilla extract
06 - 2 cups all-purpose flour
07 - 1/2 cup dark cocoa powder
08 - 2 teaspoons baking powder
09 - 1 teaspoon baking soda
10 - 2 teaspoons pumpkin pie spice
11 - 1 teaspoon table salt

→ For the Mix-ins

12 - 2/3 cup white chocolate chips
13 - 2/3 cup milk chocolate chips
14 - 2/3 cup dark chocolate chips

# Instructions:

01 - Heat your oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat.
02 - In a large bowl, beat together the brown sugar and oil until the mixture looks grainy like wet sand. Add the pumpkin puree, egg, and vanilla extract, and mix until everything is well combined.
03 - In a separate bowl, stir together the flour, cocoa powder, baking powder, baking soda, pumpkin pie spice, and salt. Slowly add this dry mixture to the wet ingredients, mixing just until everything comes together.
04 - Toss all three types of chocolate chips together in a small bowl. Set aside 3 to 4 tablespoons for topping the cookies later. Fold the rest of the chips into the cookie dough.
05 - Drop spoonfuls of cookie dough onto the prepared baking sheet, spacing them a couple inches apart. Bake for 10 minutes.
06 - Take the cookies out of the oven and let them sit on the hot baking sheet for 2 to 3 minutes. This helps them firm up. Then carefully move them to a piece of parchment or wax paper on the counter.
07 - While the cookies are still warm, press a few of the reserved chocolate chips into the tops to make them look extra pretty. Let the cookies cool completely before storing them in an airtight container.

# Notes:

01 - These cookies are soft and fudgy, perfect for fall with the pumpkin and spice flavors.
02 - Store in an airtight container at room temperature for up to 5 days.
03 - You can use canned pumpkin puree or homemade - just make sure it's pure pumpkin, not pumpkin pie filling.
04 - The cookies will look slightly underdone when you take them out - that's what keeps them soft and chewy.
