Buckeye Candy (Print Version)

# Ingredients:

01 - 2 cups creamy peanut butter (not natural).
02 - 1/2 cup unsalted butter, softened.
03 - 2 tbsp light brown sugar, packed.
04 - 1/4 tsp salt.
05 - 1 1/4 tsp vanilla extract.
06 - 3 1/4 cups powdered sugar.
07 - 2 cups semisweet chocolate chips.
08 - 1 tsp coconut oil or shortening.

# Instructions:

01 - Beat peanut butter and butter until combined.
02 - Mix in brown sugar, vanilla, salt.
03 - Gradually add powdered sugar until combined.
04 - Roll tablespoon-sized balls.
05 - Freeze for 15-20 minutes.
06 - Melt chocolate and oil in 25-second bursts.
07 - Dip balls using toothpick, leaving top exposed.
08 - Smooth toothpick marks.
09 - Let chocolate set.

# Notes:

01 - Can skip brown sugar if concerned about texture.
02 - Use regular not natural peanut butter.
03 - Can use melting wafers instead of chips.
04 - Freezes well for months.
