01 -
Preheat your oven to 400 degrees.
02 -
Heat vegetable oil in a non-stick skillet over medium heat. Once hot, fry the tortillas one at a time until golden brown on both sides, about 2 to 3 minutes per side. Remove each fried tortilla and drain on a paper towel-lined plate.
03 -
Layout 4 of the fried tortillas on a baking sheet - these will be the bases for your pizzas.
04 -
Spread an even layer of warmed refried beans on each base tortilla. Add a layer of the cooked Mexican-seasoned ground beef, then sprinkle with half of the mozzarella cheese.
05 -
Place one of the remaining fried tortillas on top of each pizza to create a sandwich-like structure.
06 -
In a small bowl, combine the taco sauce and red enchilada sauce. Mix well until combined.
07 -
Spread about 2 tablespoons of the sauce mixture over the top of each pizza. Sprinkle with the remaining mozzarella cheese and all of the Mexican cheese blend.
08 -
Bake at 400 degrees for 3 to 4 minutes until the cheese is melted and bubbly.
09 -
Top each Mexican pizza with diced tomatoes, black olives, and chopped green onions. Slice into quarters and serve hot!
