In a large skillet over medium heat, brown the ground beef with the diced onion until the meat is fully cooked and the onions are softened. Drain any excess grease. Stir in the taco seasoning and 1/4 cup water. Reduce the heat to low and simmer for 3 to 5 minutes until the mixture thickens. Remove from heat and set aside.
02 -
In a separate skillet, heat the oil over medium-high heat. Fry each tortilla for about 30 seconds per side until golden and crispy. Transfer to a paper towel-lined plate to drain. You need 12 crispy tortillas total.
03 -
Preheat your oven to 400 degrees (200°C). Line a sheet pan with parchment paper.
04 -
For each Mexican pizza, spread refried beans on one crispy tortilla. Add some of the seasoned beef on top of the beans, then sprinkle with a mix of cheddar and pepper jack cheese. Top with a second crispy tortilla to make a sandwich.
05 -
Spread enchilada sauce over the top tortilla of each pizza and sprinkle with more cheese. Repeat this process to make 6 pizzas total and place them on the prepared sheet pan.
06 -
Bake for 6 to 8 minutes, or until the cheese is melted and bubbly.
07 -
Remove from the oven and top each pizza with chopped tomatoes and sliced green onions. Serve immediately while hot and crispy!
