Copycat Texas Roadhouse Rattlesnake Bites (Print Version)

# Ingredients:

→ Cheese Mixture

01 - 2 (8 oz) blocks pepper jack cheese, shredded
02 - 2-3 jalapeños, diced (depending on how hot you like them)

→ Breading Station

03 - 1/2 cup flour
04 - 1 egg
05 - 1 cup milk
06 - 1 1/2 cups bread crumbs
07 - 1 teaspoon cayenne pepper
08 - 1 teaspoon paprika
09 - 1 teaspoon garlic powder
10 - Oil for frying

# Instructions:

01 - In a bowl, combine shredded pepper jack cheese and diced jalapeños. Shape the mixture into about 1½-inch balls, squeezing tightly to compress them well.
02 - Place the cheese balls on a cookie sheet and freeze for about 30 minutes. Meanwhile, preheat your deep fryer to 350°F.
03 - Set up three bowls: one with flour, one with egg and milk mixed together, and one with bread crumbs mixed with cayenne pepper, paprika, and garlic powder.
04 - Once chilled, roll each ball in flour first, then dip in the egg and milk mixture, and finally coat thoroughly with the seasoned bread crumbs.
05 - Fry the breaded balls in batches for 3-4 minutes or until golden brown all over.
06 - Drain on paper towels and serve hot with your favorite dipping sauces.

# Notes:

01 - Shredding your own cheese from blocks helps the rattlesnake bites hold together better than pre-shredded cheese.
02 - Freezing the cheese balls is crucial - it prevents them from melting too quickly and falling apart in the hot oil.
03 - These are a copycat version of the popular Texas Roadhouse appetizer.
04 - The combination of melted pepper jack cheese and spicy jalapeños creates the perfect bite-sized appetizer.
