Cottage Pie Baked Potatoes (Print Version)

# Ingredients:

01 - 4 baking potatoes.
02 - 1 pound lean ground beef.
03 - ½ cup onion, chopped.
04 - 1 garlic clove, minced.
05 - Salt and pepper to taste.
06 - ¾ cup tomato paste.
07 - ¼ cup Worcestershire sauce.
08 - 1½ cups beef broth.
09 - 2 cups frozen mixed vegetables.
10 - 1 cup shredded cheddar cheese.

# Instructions:

01 - Bake at 400°F for 1 hour or microwave 10 minutes until tender.
02 - Brown beef with onion and garlic. Add tomato paste, Worcestershire, broth and vegetables. Simmer until thickened.
03 - Cut X in tops, squeeze sides to open. Place in baking dish.
04 - Fill potatoes with meat mixture, top with cheese. Bake 5 minutes or broil 2-3 minutes until cheese melts.
