Cowboy Casserole (Print Version)

01 - ½ pound ground beef (85/15 lean)
02 - 1 cup corn kernels
03 - ⅔ cup condensed cream of mushroom soup
04 - 1 cup sharp cheddar cheese, shredded (divided)
05 - ⅓ cup whole milk
06 - ¼ cup sour cream
07 - 1 teaspoon onion powder
08 - ½ teaspoon black pepper
09 - ½ cup cooked bacon, crumbled
10 - 32 ounces frozen tater tots

# Instructions:

01 - Preheat your oven to 375°F and get a 9x13 inch baking dish ready.
02 - Cook the ground beef in a large skillet over medium heat, breaking it up as it cooks until nicely browned and no pink remains.
03 - Add corn, cream of mushroom soup, half the cheddar cheese, milk, sour cream, onion powder, black pepper, and crumbled bacon to the skillet. Stir everything together until well combined.
04 - Spread the beef mixture evenly in your baking dish. Sprinkle the remaining cheese on top, then arrange the tater tots in a single layer over everything.
05 - Bake uncovered for 40-45 minutes until the tater tots are golden brown and crispy on top.
06 - Remove from oven and sprinkle any remaining cheese over the hot tater tots. Return to oven for 5 more minutes until cheese melts.

# Notes:

01 - Let the casserole rest for 5-10 minutes before serving to help it set up and make cutting easier.
02 - You can substitute frozen corn for fresh or canned corn - just drain canned corn well.
03 - Cook the bacon ahead of time or use pre-cooked bacon bits to save time.
