01 -
Boil the spaghetti in salted water until al dente according to package directions. While the pasta is cooking, prepare the sauce.
02 -
In a large pan, brown the chopped bacon until crispy. Remove it with a slotted spoon and set aside. Drain all but about 1 tablespoon of the bacon grease from the pan.
03 -
In the bacon grease, sauté the diced onion for about 5 minutes until softened. Add the minced garlic and cook until fragrant, about 1 to 2 minutes.
04 -
Add the ground beef to the pan and brown it until completely cooked through, breaking it up as it cooks. Drain off any excess grease if necessary.
05 -
Add the fire roasted tomatoes, chili beans, tomato sauce, diced green chilies if using, beef broth, and all the seasonings (garlic powder, onion powder, chili powder, oregano, seasoning salt, cumin, and sugar). Mix everything together well, cover, and simmer on low for about 5 minutes.
06 -
Drain the cooked spaghetti. Turn off the heat under the sauce. Add the drained spaghetti and half of the cooked bacon to the sauce and mix everything together really well.
07 -
Serve topped with grated cheddar cheese and the remaining crispy bacon. This hearty cowboy spaghetti is so good!
