Crab Bisque (Print Version)

# Ingredients:

01 - 1 pound lump crab meat.
02 - 2 tablespoons butter.
03 - 1 medium onion, finely chopped.
04 - 2 cloves garlic, minced.
05 - 2 tablespoons tomato paste.
06 - 2 cups seafood broth.
07 - 1 cup heavy cream.
08 - 1 teaspoon paprika.
09 - 1 teaspoon fresh thyme, chopped.
10 - Salt and pepper to taste.
11 - Fresh parsley for garnish.
12 - Red pepper flakes (optional).

# Instructions:

01 - Cook onion and garlic in melted butter until soft, 3-4 minutes.
02 - Stir in tomato paste and cook 2 minutes until caramelized.
03 - Pour in broth and simmer, then stir in cream.
04 - Add crab, spices and simmer 10-15 minutes until thickened.

# Notes:

01 - Use fresh crab if possible.
02 - Can blend partially for creamier texture.
03 - Keeps 3 days refrigerated.
