Crack Chicken Penne (Print Version)

# Ingredients:

→ Base

01 - 4 slices thick-cut bacon
02 - 1 pound boneless skinless chicken breast, cut into bite-size pieces
03 - 8 ounces uncooked penne pasta

→ Sauce & Cheese

04 - 1 ounce (2 tablespoons) ranch seasoning
05 - 3½ cups low-sodium chicken broth
06 - 4 ounces cream cheese
07 - 2 cups shredded cheddar cheese

→ Garnish

08 - 1 tablespoon chopped parsley

# Instructions:

01 - Cook bacon until crispy in Dutch oven. Remove, drain most fat leaving 1 tablespoon. Chop bacon
02 - Cook chicken 3 minutes until starting to brown. Add ranch seasoning and stir to coat
03 - Add penne and broth. Bring to boil, then reduce heat, cover and cook 15-20 minutes until pasta is done
04 - Stir in cream cheese until melted. Add bacon and 1½ cups cheddar cheese
05 - Top with remaining cheese, cover until melted. Garnish with parsley

01 - Can be made in Instant Pot or slow cooker
02 - Stir pasta occasionally to prevent sticking
