Cranberry & Spinach Stuffed Chicken Breasts with Brie (Print Version)

# Ingredients:

01 - 4 boneless skinless chicken breasts.
02 - 1/2 cup fresh spinach, chopped.
03 - 1/3 cup dried cranberries.
04 - 4 oz brie cheese, sliced.
05 - 2 tbsp olive oil.
06 - 1 tsp garlic powder.
07 - 1/2 tsp dried thyme.
08 - 1/2 tsp salt.
09 - 1/4 tsp black pepper.
10 - 2 tbsp honey.
11 - 1 tbsp balsamic vinegar.
12 - 1/4 tsp Dijon mustard.

# Instructions:

01 - Heat oven to 375°F (190°C). Grease a baking dish or line with parchment paper.
02 - Cut a pocket into each chicken breast's side, being careful not to cut through.
03 - Mix chopped spinach, dried cranberries, and brie slices. Stuff into chicken breasts.
04 - Rub chicken with olive oil. Season with garlic powder, thyme, salt, and pepper.
05 - Sear chicken 2-3 minutes per side. Bake 20-25 minutes until internal temperature reaches 165°F.
06 - Mix honey, balsamic vinegar, and Dijon mustard. Heat until slightly thick.
07 - Drizzle chicken with glaze. Remove toothpicks if used.
